On a recent weekend, two hundred people were taking in the mountain serenity of Estes Park while enjoying fine dining on white china plates. At the same time, miles away, a wedding reception was wowing the guests with a carefully orchestrated experience with live music, creative flower arrangements, artisan cocktails from the bar and gourmet cuisine. It’s all in a day’s work for the crew at Spice of Life catering, who don’t let off-the-grid conditions keep them from delivering a flawless event. ‘Our mission is to exceed expectations 100 percent of the time,’ explains president and general manager David Rubin. ‘Our event coordinators work with our guests from the beginning to create the complete experience. To a guest, an event might seem like it lasts six or seven hours, but it’s often the product of 12 months of planning.’ A typical event might include anything from an inflatable jumpy castle to a zip line to a live band. One of the most popular events recently are the Farm to Table series, Rubin says. ‘We have presented six din­ners in the past year, teamed up with The Farm in Lyons. We pick the vegetables and the edible flowers that day, and use local Haystack Mountain cheese, locally sourced pork, and guests can bring their own wine.
